Full Time Sous Chef  P.M.

Job Summary:

Manages the daily operations of the kitchen in absence of and in assistance with the Executive Chef.  Oversees the preparation of food and inventory levels of the kitchen with a focus on consistent, high quality food production while working to achieve budgeted numbers for food and labor costs.

Essential Job Functions:

Kitchen Operations

  • Accountable that all food and products are consistently prepared and served according to the Pressroom Restaurant’s standards.
  • Utilize advanced understanding of food preparation techniques, garnishing, equipment operation and time management to meet service demands.
  • Maintains kitchen inventory for all food and calculates correct pricing and quantity on a monthly basis.  Work with purveyors on ordering and staff with checking-in deliveries.
  • Understands and complies with all federal, state, county and municipal regulations that pertain to health, safety, and labor requirements of the restaurant’s employees and guests.  Follow HACCP guidelines for holing and serving temperatures.
  • Ensures all kitchen equipment is kept clean and kept in excellent working condition through personal inspection and by following the restaurant’s preventative maintenance program.  Reports issues and problems to the Executive Chef or General Manager
  • Maintain, enhance and create seasonal changing menus and pricing for the food products through creative menu development and presentation with the Executive Chef.

Guest Experience

  • Ensures positive guest experience in all areas.  Responds to complaints, taking any and all appropriate actions to turn dissatisfied guests into return guests
  • Fills in where needed to ensure guest service standards and efficient operations exceed customer expectations

Operations Management

  • Ensure proper staffing and scheduling in accordance to productivity guidelines.
  • Collaborate with management in the preparation of budgets, forecasts and reports.  
  • Perform supervisory responsibilities in coordination with the Executive Chef, including hiring, motivating, coaching, appraising, rewarding and disciplining, and addressing complaints and resolving employee issues.  
  • Develop and facilitate training of kitchen staff through set responsibilities and quality production standards for each particular position.   
  • Demonstrate positive teamwork with all staff members.
  • Performs other related duties and functions from time to time, in coordination with the Executive Chef.


  • Enthusiastic attitude with 4 years culinary experience in a restaurant environment.
  • Ability to manage a diverse staff in an effective and professional manner
  • Possesses excellent customer service skills
  • Gracefully handles a variety of responsibilities under pressure
  • Previous leadership experience in the culinary field required

?Physical requirements and work environment:

  • Work schedule varies and will include working on holidays and weekends.
  • Requires standing for extended periods, walking, pushing, lifting up to 50 pounds, bending and reaching, using fingers and hands, stooping, kneeling, or crouching.
  • Constant standing and walking throughout shift
  • Occasional ascending or descending ladders, stairs and ramps
